Using the same dough recipe for all; with variations depending on the desires dough. Is preferred to always use high quality ingredient to get the best results.
Take 3 teaspoonfuls of Active dry yeast and dilute it in
3 teaspoonfuls of organic blackstrap molasses, blend it together, cover and let it rise for approximately 20 minutes. Until a foamy solution forms.
Take 3 teaspoons of salt and start adding the flour slowly. then add
5 cups of unbleached white whole wheat flour and
3 cups of premium whole wheat flour
The mixer should be onto speed #2
Keep adding the flour slowly until won't stick to the bowl .
You can add a little bit of oil if you like it will change the texture of the dough.
BEING GREEN If made by hand: in a bowl and mix it with your hands until it won't stick to the bowl then knead it by hand on a floured surface approximately 8 to 10 min (that's why I bought my machine)
Divide the dough into portions put into to different pans and molds.
In about an hour should rise, then place it in your pan and stretch it to the edges, add your favorite toppings.
Bake for 15 min in a 400 degree pre-heated oven.
Store the rest of the dough in the freezer for future use in separated plastic freezer bags( use them doubled to avoid freezer burn) Or bake in loafs and store in freezer as well.
Variation to the Recipe
For sour dough let the dough rise for about 12 to 16 hours before baking.
Rustic bread let the dough rise for about 12 hours before baking and make a new dough then mix the two together.
Cinnamon rolls or cinnamon bread stretch the dough and mix sugar + cinnamon to taste stiff over the stretched dough roll and bake.
Dinner rolls. Form balls for dinner rolls Or put the dough in a cupcake pan and let it rise in a warm place for an hour in the oven.
