Lentil balls


This vegetarian friendly treat it's full of nutritious components and can be prepared in advance and kept on the refrigerator up for three days or freeze and use later; for those days that you are not in the mood for cooking.  It can be fried or oven baked. Both ways is delicious. This is a delicious and easy recipe that   everyone in your family will enjoy.  




For this recipe you will need  to previously cook one cup of lentils with a tablespoon of salt. Add black pepper or Cayenne pepper if it suit your taste. 

"It's very important to remove all the water before you mash them!!!"

You can mash them by hand or if you own  a food processor make them into a paste. This will be a great opportunity to hide those ingredients that picky kids refuse to eat. 
The second  step will be to  clean, peel and  boil 3 medium potatoes for 10 minutes or until tender.

While the potatoes are cooking,  get three  small sweet peppers and chop them finely; I used the red and orange sweet peppers. If you prefer spicy taste add only one of any variety of hot peppers.  1/2 cup of black olives, 1/2 cup mushrooms (they can be fresh or canned)1/2 cup carrots(adding carrots to the ball will add crunchiness), 1/2 onion.

Blend all the ingredients together, making a colorful full of health mixture.  



Vitamin C and antioxidant power from the sweet peppers and potatoes. The richness in  flavonoids from the onion. The vitamin k and carotene from the carrots and the various vitamins and mineral in the mushrooms.

"Lentils can help to boost energy and they also are rich in fiber so they help to improve the digestive health"



Now for the completion of the recipe with a spoon or a mini ice cream scoop  get a small amount of  the mixture and form balls and roll in wheat or rye flour. 
Squeeze well the mixture to avoid disassembling when frying.  

Press it tightly into the palm of your hand and  again form an uniform ball. 

"Lentil ball can be eaten alone or with salad,  as an appetizer or accompanying pork.



Then decide if you are going to  store it, Bake it Or fry.

Bake it: place on a oven baking sheet. Bake for 15 to 20 minutes in a preheated oven  to 350 Fahrenheit.

Fry it : if you are using this method use organic coconut oil its is very aromatic and will absorb the coconut flavor and they will taste even better.
